FoodLab

FoodLab is a school-based program created by Nancy Wolfson-Moche designed to strengthen food literacy among students. families, and communities. Food literacy is defined as the interchange of knowledge, skills and behaviors required to select, prepare, and taste food to determine and meet nourishment needs and it is key to improving children's diet, educational attainment, and prevention of chronic disease.

About Nancy Wolfson-Moche, MS

When Nancy changed her diet and approach to food and eating she transformed her life by giving birth to her two daughters. An Adjunct Professor of Nutrition at Holyoke Community College, a certified macrobiotic counselor and culinary medicine practitioner, Nancy guides people in improving their health and well-being through making informed diet and lifestyle choices. She integrates her wide-ranging skills and experience to craft and teach food awareness and culinary arts programs for children and adults. She is also a certified Yoga Alliance and Torah Yoga teacher. For twenty years before awakening to the power of food, Nancy was an editor and writer on lifestyle magazines.  Her book Vegetables for Breakfast from A to Z  invites the reader to re-imagine breakfast by enhancing it with fresh, seasonal produce. 

Nancy holds a MS in Nutrition Education from American University, and a BA in Political Science and Italian from Trinity College, Hartford, Ct. She is a Kohenet ordained by the Kohenet Hebrew Priestess Institute, a graduate of The Strengthening Health Institute in Philadelphia, PA, Jewish Spirituality Teacher Training and Yoga University (East Coast).

Meet the Team

Halle Burns
 

Halle is a vegan chef, author, and content creator. With a degree in communications and creative media from the University of Alabama, her background is in public speaking, communications research, and film production. Halle’s book Call Me Vegan,  is filled with easy, creative ways to eat more plants. Halle loves being around kids and bringing new, innovative plant-based ideas and education to FoodLab.

       Livvy Doe

Livvy has always loved how food brings people together and tells a story. She grew up cooking alongside her mother and grandmother, learning family staple dishes and discovering the joy of food as connection. Her experience working in a jam kitchen deepened her appreciation for food made with care, while years of teaching in museums and nature centers shaped her engaging, hands-on approach with children. At Foodlab, Livvy is excited to share this passion with students, helping them explore food as nourishment, self-expression, and happiness.

                  Arabella Jenkins

With a background as an educator and a passion for cooking and growing food, Arabella is delighted to share with FoodLab students the joys of connecting to food. Arabella has a bachelor's degree in Spanish from Rice University and a Master of Education from Southern Methodist University. She is also a certified group fitness instructor and is working towards a NYC Master Composter certificate. Arabella is excited to help the FoodLab team cultivate a love of yummy, nutritious food.

           Margot Kerlidou

Born and raised in Brooklyn, Margot was a French teacher and tutor there for over 10 years.  During that time she silently struggled with her health, which led her to study nutrition and herbalism, both of which were instrumental in her healing process.  Now she works to empower her friends, family, clients, and students to get comfortable in the kitchen to improve their health and well-being.  This feels fundamental and imperative, these days more than ever.
